Who Cafe Roasting: A Specialty Coffee Roaster from Yilan

Founded in 2013, Who Cafe is a specialty coffee roastery and café that has spent more than a decade serving the specialty coffee community in Yilan, Taiwan. Built around the idea of third wave coffee, the café sees specialty coffee not just as a beverage, but as a connection between flavor and everyday life. During a live brewing session, Jian Shih-Yan (better known as Yezi), the manager of Who Cafe Roasting, demonstrated his pour over workflow and shared practical insights on grinder selection and brewing parameters.  

When Does Yezi Recommend the ZP6?

During the demo, Yezi explained that he would recommend the ZP6 to people who:

  • only brew pour over coffee
  • already own a separate espresso grinder

The reason is:

  • The ZP6 is designed specifically for pour over and delivers a higher level of flavor clarity.

The ZP6 Grinding Characteristics and Flavor Profile

When describing the grinding experience, Yezi noted that the ZP6 has a very distinct cutting feel, with an overall grinding motion that feels clean and smooth. Compared with the X-Ultra, which is designed for both pour over and espresso, the ZP6 produces a cleaner cup profile with greater emphasis on:

  • aroma
  • clarity

Who Will Enjoy the ZP6?

Yezi mentioned that anyone who enjoys pour over coffee, especially washed African coffees like the ones he personally prefers, will likely appreciate the flavor profile of the ZP6.  

Who Cafe Roasting’s Pour Over Recipe and Pouring Technique

Brewing Parameters

For this demonstration, Yezi paired the ZP6 with a Gesha coffee with floral and fruity notes. Recipe:

  • Coffee dose: 20g
  • Grind setting: the ZP6 4.5
  • Water temperature: 92°C
  • Total water: 320g
  • Dripper: 1Zpresso Dripper

This recipe was designed to highlight the coffee’s aroma, subtle acidity, and rich sweetness in the finish.

Pouring Method

  • Bloom: 40g
  • Main pour: single continuous pour to 320g total

During the early stage of brewing, Yezi mainly pours in the center. After reaching around 100g of water, he gradually expands the pouring area outward.   

How the 1Zpresso Dripper Affects Flavor

For this brew, Yezi used the 1Zpresso Dripper, which features:

  • a smoother upper wall
  • inward-curving ribs in the lower section

According to Yezi, when the water level rises, the smoother upper section creates an immersion-like effect that helps increase body and overall sweetness.

Brewing Tips from Yezi

1. Adjust Grind Size Before Changing Other Variables

Yezi shared that if a coffee tastes too heavy and you want a cleaner profile, the first adjustment should be grind size. For example, with the ZP6, he would move from 4.5 to 5 or 5.5. If the brew then flows too quickly, he would return to 4.5 and adjust other variables instead, such as lowering the water temperature to maintain clarity while keeping extraction balanced.

2. Avoid Shaking the Dripper Aggressively

After adding the grounds, Yezi gently levels the coffee bed before brewing. However, he specifically warned against shaking the dripper too aggressively. Excessive shaking can cause fines to settle at the bottom of the filter, increasing the risk of clogging or stalling during brewing. This can lead to a dull, muddy cup with less flavor separation.

3. Pour Position Directly Affects Flavor

Yezi explained that he starts with center pours to help open up the coffee bed before gradually expanding outward. He also emphasized not reaching the outer edge too early, since breaking the coffee wall too soon can introduce a watery texture. Only near the end of the brew does he bring the water stream toward the outer edge.  

Final Thoughts on the 1Zpresso ZP6

From Yezi’s brewing demonstration, it’s clear that the ZP6 is a grinder built around pour over flavor performance. In terms of grinding feel, he described it as precise, with a strong cutting sensation. In the cup, the ZP6 focuses on aroma, clarity, and overall cleanliness. For pour over drinkers, especially those who enjoy washed African coffees or already own a separate espresso grinder, Yezi sees the ZP6 as a highly recommended dedicated pour over grinder.
